I was craving a stir fry so I combined a couple of recipes to get this one. Wow it came out great. i cooked up some short grain brown rice with Azure chicken stock and a little butter. while that was cooking I mixed up a sauce.

Thawed shrimp and deveined and peeled 1 1/2 lb raw shrimp, set aside. make stir fry sauce and set aside.

Stir fry sauce:

Whisk together , set aside

3/4 cup chicken stock (H2O and Azure chicken stock concentrate)

1/4 cup OJ, peach mango juice

1 tb arrowroot powder

1/2 tsp brown sugar

2-3 tb tamari

2 tb fish sauce

1 tb rice vinegar

1 tsp sriracha sauce

Vegetables:

Chopped up the following vegetable.

1 small – Onion chopped

3 cloves – Garlic minced

3″ piece of ginger – minced

1 carrot chopped  then in 1/4

1 stalk brocoli florets and stalk with skin off, chopped and diced up to bite size pieces

1 red pepper, diced and chopped up

1 green zucchini, chopped and diced up to bite size pieces

Toss in a handful or two of peanuts

add last few minutes of frying:

Fresh pea pods 1-2 cups

Garnish – sesame seeds hulled white

Stir fry up vegetables and Shrimp:

In skillet on high stir up shrimp in oil to coat pan 1 tb, cook until turn pink 2-4 minutes stirring occasionally. Stir fry vegetable in oil in separate pan. 2-3 min, stirring occasionally. Leave vegetable crunchy but shrimp needs to be cooked until pink. combine and pour sauce one cover and let simmer a few minutes to thicken 1-2 min. Serve immediately. Garnish with a dash of sesame seeds  on top
