Breakfast With No Eggs
I have had a skin rash for a long time. My Doctor said it looks like psoriasis. Looking that up I see eggs are one of the main causes. I have friends who do not eat eggs for this reason. So onto other alternatives I go. While visiting my friend in Walla Walla Alexandria I got hooked onto Steel cut oats with chia seed and fruit. Here is my version and recipe for a great filling breakfast.
First I put 1/2 cup or so of chia seeds in a mason jar and cover well with almond milk. I stir it up with a spoon and store in the fridge to use daily. It will soften the seeds and make your cereal crunchy. I use to use rice milk for everything but my new friend told me rice has a lot of arsenic in it. So off to almond milk I go.
I cook up the steel cut oats which takes about 30 minutes.
In pan place 4 cups water and adding salt (I use Himalayan pink salt), bring to a boil. Once boiling turn down to simmer setting timer for 30 Minutes. In the last 5 minutes or so of cooking I add frozen fruit I had picked, blackberries and strawberries, plus a 1/2 of canned pears (I canned last year 89 qts), Then I top with chia seed in the almond milk slurry and fresh fruit, I had fresh peaches given to me by a friend and 1/2 banana. You can use any fresh fruit you have in season. This makes a great filling breakfast. You can put butter, honey, maple syrup…or whatever suits your fancy.
